On Tuesday, February 11th, we’ll be hosting the seventh instalment in our ongoing series of Online Hedge School events exclusive to our kind Supporters, investigating the misunderstood past, the principles, and the potential of Irish single grain.
This Online Hedge-School will be the first in a two part series covering the interlocking stories of column stills and blending in Ireland. Unwilling to embrace the innovations of native son, Aeneas Coffey, Ireland’s grand Victorian whiskey industry languished into tragic pot still purism. Or so we’re told. In truth, by the 1890s there was already more column still than pot still whiskey being made in Ireland and Irish whiskey’s relationship with ‘patent’ stills is far more subtly flavoured than has been allowed. Many of these columns ran on mashes that have passed long into memory. They tell a story of local industry, the global grain trade, and of course, Irish whiskey.
Joining us to tell that story will be old friends from our distillers’ brain trust, Noel Sweeney, Eric Ryan, and David Boyd-Armstrong, along with guest MC Serghios Florides. From pre-Coffey experimental patent stills to the tall stills that turned Belfast into a distilling powerhouse to the Cooley Distillery’s introduction of a modern single grain category in the ‘90s, we’ll be telling a different history of Irish column stills, investigating the principles and potential of Irish single grain today and the genuinely peculiar mashes and procedures of its past.
