On Wednesday, September 11, we have the fifth of our ongoing series of Online Hedge School events exclusive to our kind Supporters, investigating the origins, the history, and the effects of triple distillation’s popularity in Ireland. Not all Irish whiskey may be triple distilled but there’s no getting round it, the practice is inseparable from Irish whiskey’s modern identity. But how much do we know about how that third pot got in the still house? Is it even always as simple as a third distillation? From rectifiers to Victorian experiments to the rise of Irish whiskey as we know it now, we’ll be tracing stills and their procedures with guest MC Barry Chandler.
On the night, Barry will chat with Midleton distiller and Cork whiskey historian Eric Ryan about the innovations, dead ends, and even loose ends of Victorian Ireland’s distilling techniques (many of which took shape in Cork), while Fionnán does his best to piece together the story of how exactly an arbitrary practice became so very Irish. From cut points to still shapes and mash practices to changing excise pressures, it’s a story at the dead magnetic centre of Irish whiskey’s evolution into the drink we know today.
Joining us on the night are two dazzlingly knowledgeable distillers, Lora Hemy of Roe & Co and Greg McEntee of Church of Oak, both of whom have worked across double, triple, and even ‘two and a half times’ distillation regimens. On the far side of history, they’ll be chatting with Barry and with each other about the nuanced results of distillation strategies on the drink as we know it – and importantly as we nose it – in a glass today. We promise, there has never been a talk like this before.
